Nice gluten-free take on the classic lasagna
Ingredients
1 Yellow Onion
2 cloves Garlic
3 Zucchini
10 oz Ground Beef
1 can of crushed tomatoes
1 tablespoon Italian herbs
1 tsp chili flakes
8 oz ricotta cheese (can be skim)
1 cup mozzarella cheese
Directions
Preheat the oven to 425 degrees. Thinly slice the zucchini with a thin slicer.
Cook onion and cloves for 5 mins until softened, add the chili, add the tomatoes, add the seasoning, simmer for another 10 minutes.
Put a layer of zucchini in a greased baking dish (6×9)
add sauce
add ricotta
add mozzarella
repeat once more
add some cheese on top if you wish
bake for 20 mins till cheese looks good
