Anything goes with meatloaf but here’s my favorite recipe.
Ingredients:
1 lbs organic ground beef 85/15
1 red onion
3 cloves of garlic
1 thick slice of bread
1/2 cup Sun dried tomatoes
Beef stock
Italian seasoning
Salt/pepper
Instructions:
Preheat oven to 400F
Mince garlic, finely chop onion, chop sun dried tomatoes.
Tear the bread up in small pieces and put it in a mixing bowl. Soak the slice of bread in beef stock, just enough to cover it.
In the mean time, add some olive oil to a cooking pan, add the onions and garlic and fry until softened.
Add the garlic, onion, tomatoes, beef to the mixing bowl and mix it well. Add seasoning to taste (do not consume raw beef disclaimer blabla) just enough that you think would make it taste good.
Divide the mixture into 4 even portions and form small meat loafs with your hands, place them on a baking sheet. Bake in oven for about 30 minutes, check if loaf is complete done by cutting one open.
