Low carb Chicago deep dish pizza

This amazing recipe is low in carbs but still very, very filling. Also, the amounts of cheese could be adding a bit of calories 🙂 The filling is just a start, you can make the pizza with anything you want.

Ingredients
600g Shredded Cheese
2 Eggs
2 Cups Almond Meal
3 Onions
2 Paprika’s/Bell Peppers
100g Chorizo
Tomato Sauce (see my recipe for an easy to make hot tomato sauce)
1
00g Mozzarella

Directions
Place three cups of cheese into the microwave for about 90 seconds,
Mix in the two eggs and almond meal. Make sure everything has spread through evenly.

Push the mixture out and up the sides of the pan. I used a Spring Form for this. Make sure the bottom is not too thick

Place this into an oven on at least 220ºC for 20 minutes or so. It’s worth checking regularly. Don’t worry about the edges coming away from the sides.

In the mean time I fried the onions and paprika’s a bit and baked the chorizo to drain the fat and get it a bit crispy. Again you can use anything you would like for filling this guy up.

Now it’s time to fill. First put in the veggie’s, put some mozzarella in between. You can use more than just 100gr to make it nice and stringy. Now put on a layer of spicy tomato sauce and finally cover it with the rest of the cheese.

It’s baking time; set your oven to 180ºC, and place the pizza on the middle or lower rack, and allow it to cook for 45
minutes or more. Just check it every now and again until it’s nice and golden brown. The result should look like the picture.
