Gotta love a greek salad every now and then. It’s fresh, exciting and quite easy to make. May even be healthy as well:)
Ingredients:
Dressing:
Balsamic vinegar
Olive oil
Lemon juice
Fresh dill
Fresh parsley
Black pepper
Salad:
Mini cucumbers
Roma tomatoes
Green bell pepper
Red onion
Pickled red onion (see recipe here)
Feta cheese
Instructions:
For the dressing I just mix the items together to taste, dill and parsley are optional.
For the salad, cut cucumber lengthwise and then cut into small pieces. Cut bell pepper in small pieces. Thinly slice onion. Cut tomatoes in 4, cut out the middle part so you only have the flesh left. The cut into small pieces. Crumble feta cheese.
Mix dressing in with the veggies, mix well. Serve, enjoy:)
