This is a very easy salad which is a hit at every party.
Ingredients
2 cans of tuna ( I usually take the one in water)
6 small pickles (or use these home-made pickles)
8-10 sundried tomatoes
1 tbsp of capres
salt and pepper
3 tablespoons of light mayonnaise (See here for home-made mayo, or use Duke’s)
1 tsp of chilipowder
1/2 red onion
Directions
Chop up the onion and pickles. Mix it all in a bowl. Add salt and pepper for flavor and you are good to go:)
Works for your tuna sandwich or can be served on a baguette or crackers.
Bonus
If you want to convert this into a meal add the following:
200gr of Farfalle pasta (butterfly shape)
100gr of semi sundried tomatoes
100gr of feta cheese in cubes
2 hardboiled eggs
The pasta and eggs have to cool down a bit before you add them to the mixture.
