GF cheese cookies/shortbread

Ingredients:

2 cups shredded Parmigiano Reggiano (please don’t use cheap Wisconsin “parmesan”

2 cups almond flour

1 stick of butter, soft

1 egg

1 tbsp Italian seasoning

1 tsp salt

Directions:

Mix it all up. Form a big ball.

Divide in half and make 2 long rolls.

Wrap it in foil and let it stiffen up in the fridge for at least one hour.

Warm up oven to 360F/180C

Grab 2 baking sheets and put parchment paper on it.

Take it out of the fridge and slice in small slices (about 1/4-1/2 inch thick). Put these on the baking sheets.

Bake for 12-15 mins until golden brown. You may also just want to see how you like them, I like them crunchy and go the full 15 mins

Let them cool down for an hr in a rack, if you can wait that long. Enjoy!!
