Gluten free Protein Bagels

Another take on these incredibly easy recipe for quick and tasty bagels with extra protein.

Ingredients:
1 cup gluten free flour (I use king arthur measures for measure)
1 cup full fat cottage cheese

2 eggs

2 tsp baking powder

1 tbsp xantham gum
1 tsp salt (can be smoked sea salt)
1 egg for eggwash (optional)
Your seasoning of choice

Directions:
Mix it all together, it will be very sticky.
Split up the dough into 4 equal parts.
Make a ball out of each part, flatten it a bit and punch a circle through it.
Stir egg and apply to bagel.
Season with your favorite seasoning, I used everything bagel and Parmesan in this picture.
Bake at 375F for 30 minutes.
