This salad is a new staple in our house. Pretty easy to make and quite delicious.
We make the thousand islands dressing from scratch, see here for the recipe.
Ingredients:
for beef:
1 pound of lean ground beef
1 tablespoon yellow mustard
1 tablespoon nutritional yeast
3 tablespoon pickle juice
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon ground black pepper
for salad:
2 heads of romaine lettuce
1 cup of cherry tomatoes
1 cup of pickles, I prefer the German style pickles
1/2 cup of sweet onion
Thousand Island dressing to taste
Instructions:
for beef:
Mix all ingredients together (except for the beef)
Brown the beef in a skillet by using some olive oil
Once browned, drain it, then add the mixture and heat it through for another minute
for salad:
Chop lettuce, tomatoes, onions and pickles. Mix it all together. Add beef mixture. Add dressing to taste.
The kids also like getting this served on a hamburger bun but that’s optional.
