This is a quick and very versatile dish. Makes a lot of food and is great for leftovers as well.
Ingredients:
2 onions, chopped
2 cloves of garlic, minced
Italian seasoning to taste
red pepper flakes to taste
1 carton of chicken broth (32oz, give or take)
3 cans of fire roasted diced tomatoes (42oz, give or take)
1 lbs uncooked Italian sausage (give the recipe a try, if you like more meat, double it)
Family pack of fresh cheese tortellini (about 20oz, can be any tortellini with filling really)
1/2 cup shredded parmesan cheese
4 cups baby spinach (you can add much more if you want)
1/2 cup heavy whipping cream (to make it creamy, this is optional)
Fresh basil for garnish
Directions:
Heat a large pan over medium heat. Add olive oil to the pot. Remove sausage from casing and crumble them in pieces. Brown the sausage for about 5 minutes. Add the onion and garlic and sauté for another 5 minutes. Add the Italian seasoning and red pepper flakes and cook for 1 minute.
Add chicken broth and tomatoes. Stir well and simmer the ingredients for 10 minutes.
Add tortellini, spinach, parmesan and cream (optional). Cook until the tortellini floats up and the spinach is wilted. (about 3 mins). Try the tortellini to see if it’s done.
Garnish with some more parmesan, pepper flakes and fresh basil. All of this is optional.
