Spinach Quiche

This is a basic recipe for a spinach quiche but really it’s the basics for any quiche if you want. It’s like making a pizza, feel free to add whatever you want as toppings.

Ingredients:
1 pack of Croissant Rolls dough, you may need 2 depending on the springform size
bunch of spring onion
4 eggs
6-7 oz of greek yoghurt or creme fraiche
3 oz of grated cheese
4 oz of goat cheese
1lb of spinach (frozen) If you want to use fresh spinach, heat it through and then thoroughly drain it to remove any excess liquid
1 onion

2 cloves of garlic
salt, pepper, nutmeg, blackening seasoning

Instructions:
Heat oven to 375F
Cut the onion and the spring onion. Fry the onion and the white part of the spring onion until soft, season with blackening seasoning. Add the garlic and stir until fragrant, add the spinach. Heat it through and make sure there is no excess liquid. Season with salt, pepper and nutmeg or whatever you prefer to make it taste good.
In a bowl mix the eggs, yoghurt, cheese, green part of the spring onion and goat cheese, again add seasoning.
Roll out the croissant dough and apply it to the spring form until you have the bottom covered and sides of 1 1/2 inch high. It mostly is some handy work and pressing your fingers to make sure it becomes one piece. Use a fork to prick holes in the bottom.
Optionally you can cover the bottom first with some more grated cheese. Otherwise, cover it with the spinach onion mix.
Poor over the egg/cheese mix and slightly stir it in.
If you want you can put on another layer of grated cheese.
Bake in center of oven for about 30 minutes until golden brown.
