It’s that time of the year, we just attended a Peach Festival and well all the peaches were ripe at the same time. We couldn’t eat them all so what do you do? You make a Peach Cobbler! This tastes great with some vanilla ice-cream although we couldn’t even wait to put that on.
The peaches came fresh from Gross’ Orchard
Ingredients
6 cups peaches (I used fresh ones but they can be frozen as well)
3/4 cup organic cane sugar divided into 1/2 cup and 1/4 cup
1/2 cup butter melted
1 cup flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup organic brown sugar
1 teaspoon cinnamon
3/4 cup milk (this can be substituted with unsweetened vanilla almond milk)
Directions
Combine peaches with 1/2 cup sugar, mix well and set aside.
Preheat oven to 375°F.
Pour butter into the bottom of a 2qt baking dish. (8inch square)
Combine flour, baking powder, salt, brown sugar, remaining 1/4 cup white sugar and cinnamon, mix well. Add milk and stir just until combined. Spread over butter mixture.
Top with peaches and any juices.
Bake for 45-55 minutes or until set.
